Fairmont Pacific Rim is located in Coal Harbour of downtown Vancouver. This hotel offers many great dining options, but I was here to experience RawBar’s newest brunch menu, Five Course Cocktail Brunch.
The RawBar, situated in The Lobby Lounge of the hotel, is the first sushi bar in Vancouver that is recognized as 100% Ocean Wise by the Vancouver Aquarium. The RawBar is sleek and modern, and the perfect backdrop for sushi chef Takayuki (Taka) Omi and head bartender, Grant Sceney.
Two options are available for the first course:
Red Tuna Tataki (right) yuzu kosho vinaigrette, soy gelee, daikon and micro greens.
Paired with Light-Zaiten gin, organic green tea, dry vermouth, rosemary, cucumber, and lime.
Torched Wagyu Beef Salad (left) red onion, sake-beef puree, scallion-ginger emission, nori chips, miso crime fraîche.
Paired with Bloody Mary vodka, lemon, tomato juice, sriracha, horseradish, salt and pepper.
Signature Bacon and Sable Miso bacon dashi, house-cured sablefish, ginger and scallion.
Paired with Berry Makes Miso Happy Grand Marnier, wheat beer, ginger, and lemon.
Two options are available for the main course.
First option; Kurobuta Pork Kakuni braised pork belly, 62°c egg, sweet soy broth, daikon, carrot, potato, and taminishiki rice.
Paired with Pork ‘N’ Cider Lonetree cider, sweet vermouth, and sherry.
Second option; Wild Salmon Motoyaki “Benny” poached egg, sweet milk bread, ikura, miso hollandaise, and avocado.
Paired with Pepe Le Pew Lillet rosé, sherry, and sparkling brut.
Fourth course; Sushi Omakase – maki, nigiri, hako, and temari.
Paired with Sparkling Junmai Sake.
And the last dish; Yakult Shooter oyster with plum gelée, pear, matcha green tea, black sesame powder, and yuzu pearl.
Paired with Wakayama Beach gin, yuzu, basil, coconut water, and ginger.
The Cocktail Brunch is well priced at $42 per person and +$28 with the optional cocktail pairing. I would highly recommend the cocktail pairing as it enhances the flavour of each dish to a whole new level.
Brunch is available on Saturday + Sunday from 10:00 a.m. – 2:00 p.m.
