Located in downtown Squamish, The Salted Vine Kitchen + Bar is a collaboration between industry veterans Jeff Park and Pat Allan. With a menu of small share plates that focus on fresh, sustainable and seasonal ingredients.The new restaurant offers a contemporary and inspired taste of the Pacific Northwest and a new upscale dining experience in the heart of historic Squamish.
A full bar featuring an array of wines sourced both from BC and around the globe, local craft beers on tap and housemade cocktails.
Fresh Kussi Oysters served with mignonette and horseradish.
Scallop Crudo with prosciutto, fennel, cucumber, apple purée and ahi amarillo.
Charcuterie Platter with assorted meats, pickled mustard seeds and gherkins. On the same platter we were served vibrant beets, burrata, citrus, granola and greens.
Grilled Octopus with gochujang, zucchini, eggplant, peppers and lotus root.
Merguez Sausage served with couscous, tomato fondue, sultans raisins and arugula.
Grilled flat iron Wagyu Beef with smoked sea salt, chimichurri and seasonal vegetables.
Paired with Pasico Bush Vine Monastrell Shiraz, Jumilla2014
For dessert we were treated to Valrhona Chocolate cake, Lemon Tart and assorted CHEESES (Goat milk cheese from Albert’s Leap Ashley, Moonstruck Baby Blue cheese from Salt Spring Island, BC, and Mahón, Spain)
The restaurant is currently open for dinner service; but will initially open for happy hour, lunch and weekend brunch service will be introduced in the fall. It was such a privilege to experience Salted Vine’s first dinner service.
