the apron is tucked in the Westin Wall Centre, where Chef Robert Uy creates a contemporary West Coast style menu with an Asian flare. The restaurant is small, but offers a bright and airy atmosphere with outdoor seating.

The first presented dish was this stunning Ocean Wise Albacore Tuna Poke with ponzu pearls, seaweed in tobiko soil, red ogo, rice crackers and avocado cream. The Tuna Poke, had lots of complex flavours and textures, much different than a traditional poke.

Next was the Haida Gwaii Clear Water Halibut with tamarind, makrut lime dust crusting, local vegetables in a coconut curry, served with mango sticky rice. The curry was an absolute delight to eat; it was creamy and bursting with flavours. However the halibut was slightly overcooked making it dry.

Third dish; seared Grass Fed Beef Tenderloin with gougers, basil pomp puree and peppercorn jus. The beautiful cut of beef was tender and cooked to a perfect medium rare. The basil pomp puree was smooth in texture and I really enjoyed the subtle basil flavour.

The last dish was a deconstructed Bubble Tea style dessert; Taro tapioca pearls, taro gelato, taro sponge, condensed milk and meringue. A perfect light dish to end the meal. This was my favourite dish and I would come back just for this dessert.
Chef Uy and the apron provides a nice option for diners seeking something other than traditional Asian cuisine in Richmond. Chef Uy’s creations were an absolute eye candy, and hold true that “you eat with your eyes first.”
